VEGETARIAN CARPACCIO

Ingredients: beets, cooked and peeled.
Capers nonpareil
Parmigiano Reggiano cheese shaved
Fresh arugula
cup red wine vinegar
Laudemio extra virgin olive oil
salt and pepper

Slice the beets as thin as you can, arrange them in a bowl and cover them with the Laudemio and vinegar mixture, salt and pepper. Let them stand to marinate overnight. Arrange the beets on a serving dish or individual plates, sprinkle the capers, arugola and shavings of Parmigiano Reggiano. Drizzle with Laudemio extra virgin olive oil. Buon Appetito.
