I'm sure other have variations of this but this is how I do it....
sorry I can't give you exact amounts on everything cuz I kinda just throw it all together:
diced tomatoes
chopped red onion or green onion
chopped garlic clove or two depending on size of dish
chopped fresh cilantro (be careful with this as too much can overpower a dish, start w/ a tsp...u can always add more)
chopped pineapple
chopped mandarin oranges
coconut flakes (a couple of tbs)
rum (pour rum into glass, spoon out a tsp or two into salsa, drink the rest while making the salsa)
the only thing I would say is to try and drain the toms(only use the flesh if not using canned), mandarin o's and pineapple as much as possble because the salsa I made the first couple of times was really watery...however you do it, it is still a huge hit at summer parties!
